gluten free flour recipe

If you prefer to make your own gluten free flour blend from scratch, or are based outside of the UK and want to recreate the FREEE gluten free plain flour, then this is a lovely recipe to try.

It’s extracted from my cookbook Eat & Enjoy Gluten Free and works with all the delicious gluten free recipes in the book (if you like good gluten free food, it’s a great book to add to your collection).

What Can I Use This Flour Blend For?

My gluten free flour blend is a great multipurpose flour that can be used for baking cakes, cookies, breads, making pasta and even thickening sauces.

Use it in any recipe of mine that is based on the FREEE flour blend (a large majority of my bakes). However do not use it to replace the Caputo flour, as that’s a very different blend.

Where Can I Buy The Individual Flours & Starches?

In the UK, I would recommend Shipton Mill. They sell a really nice range of reasonably priced gluten free flours and starches. I use them often.

There’s also a new company called Other Flours. I haven’t tried their range yet but the owner is an excellent gluten free bread baker and I am sure he has sourced high quality ingredients.

In the US, I see the Bob’s Red Mill range sells all of the flours/starches needed for this recipe, so that’s a good place to start. Although I am sure there are other stockists too.

Elsewhere in the world, best do a little google search to identify your best local stockists. If you have any recommendations for your country, do let me know.

Gluten Free Flour Recipe (Plain/All Purpose Blend)

Prep Time: 5 minutes
Total Time: 5 minutes

A versatile gluten free plain/all purpose flour blend that can be used for making breads, cakes, cookies, pasta and more.

Ingredients

  • 600g (1lb 5oz) white rice flour/rice flour
  • 150g (5.5oz) potato starch
  • 150g (5.5 oz) tapioca starch
  • 100g (3.5 oz) buckwheat flour

Instructions

  1. Add the flours and starches to a large mixing bowl.
  2. Mix really well for a couple of minutes, to ensure the different flours and starches are completely combined. I use a balloon whisk to do this.
  3. Carefully tip into a large tupperware or jar with lid (at least 2 litres/68 fl oz in size) for storage and use as required.

Notes

Keeps for about 6 months. Store in a cool place.
