1. Mac n Cheese
Cheese + pasta equal the ultimate comfort food, and nothing is more comforting that a big bowlful of my gluten free mac n cheese. I also have a second mac and cheese with hidden veggies, which is a great one to try for equally comforting food with a big pile of yummy veg.
2. Aubergine Parmigiana with Garlic Bread
We had this vegetarian dish for dinner today and I had forgotten how warming and comforting it is. Soft aubergine, layered with tomato sauce and then baked with cheese on top. Mmmm. For extra oumpf, serve it with homemade gluten free garlic bread.
My mum used to make us beef stew with dumplings when I was growing up and it reminds me of cosy evenings at the family home. I created my own version, rich with red wine and with light, buttery dumplings perched on top.
My husbands favourite meal of all time, this risotto is pure comfort food in a bowl. Sweet roasted chunks of butternut squash, crispy bacon and salty parmesan cheese all in one dish yaaaassss.
A fifteen-minute wonder dish, which I always whip up when I am feeling a bit run down or knackered but still wanting a good bellyful of food. It really only takes 15 minutes from start to finish!
The ultimate Italian comfort food (with a very English twist).
“Soup…SOUP?!” I hear you say. This wonderful soup is thick and silky due to the lentils it contains, yet also healthy and both dairy free and vegan. Dish it up in big bowls with slices of gluten free buttered toast.
There’s something about molten cheese that makes everrrrything better IMO. These super simple quesadillas are a great one to whip up when you are in need of a bit of TLC.
My newest dessert creation is comfort food personified. Succulent pears, soft gluten free sponge, STICKY TOFFEEE SAAAAAUCE. What’s not to love!
I promise you, these brownies are life-changing. Mega squidgy and chocolate, they are the one sweet treat I regularly crave. I also have a few other varieties you can try: salted caramel swirl brownies, peanut butter stuffed brownies, PBJ brownies, double chocolate brownies and white chocolate raspberry brownies. Oooo er, how will you ever choose?!
