I often use leftover chicken in my recipes, as we always have some left from our Sunday roast. The leftover chicken is easy to use and has great flavour, as you get a mix of both white and brown meat.

Equally, I also find it so much cheaper to roast a whole chicken and use the meat for two or three recipes. So I often do this rather than buying chicken breast or thighs. Plus it’s less wasteful and the carcass makes for great stock if you have the time to boil it down.

All my recipes are gluten free, as I have coeliac disease and have to follow a strict gluten free diet. However, many are simply naturally gluten free, making them perfect for the whole family. Or for serving to friends and visitors.
