Tasty and involving minimal effort, this cajun pulled chicken is perfect for batch cooking. I generally make a double batch in my slow cooker, portion it up and freeze. Or serve straight away if you plan on having it for dinner!
Super soft, pulled chicken, smothered with a tasty cajun sauce. It’s also gluten and dairy free! I cannot get enough of this recipe and always keep a stash of it in our freezer.
It’s such a handy pre-made thing to have in the freezer – use it for burrito bowls, tacos, gyros, wraps, loaded nachos, sliders and more. Try it with my delicious Flatbread 2.0 Recipe or homemade corn tortillas, oooo or stuffed into arepas – yum!
One last idea – make a batch of my 3-ingredient gluten free wraps and make pulled chicken and cheddar quesadillas, with smashed avocado and pink pickled onions on the side. I am DROOLING!

Is This a Family Friendly Recipe?
Yes! For grown ups, there’s a gentle hit of cajun spice, but if you are making it for your family I have a small recipe twist to make it kid friendly. Simply using cinnamon in place of cajun spice, ensures it still has a beautiful flavour, without any heat.
Can I Make This in the Oven Instead?
If you don’t have a slow cooker you can absolutely oven cook this instead. Using a large, lidded casserole dish, brown the chicken and add all the ingredients per the recipe, then bring it to the boil on the hob.
Then place a lid on the dish and cook in the oven for 3.5 hours at 150C (fan). Check every hour or so to ensure the liquid hasn’t evaporated off, and top up with a little water as and when required. Then shred the chicken and cook on the hob for a final 20 minutes.
Which Cajun Spice Blend Do You Use?
I use the Bart Cajun spice, I find it has a nice balance of flavours and is gluten free. You can use any variety you like, but please always check the label to ensure it is gluten free.

A great slow cooker recipe, which you can double or triple to batch cook. Gently spiced with cajun flavours and a tasty sauce, this pulled chicken is fab in wraps, on flatbread, burrito bowls, tacos and more. Gluten and dairy free recipe.
- 1 kg boneless, skinless chicken thighs
- 2 tsp onion granules (or 1 large brown onion, finely diced and sauteed until soft)
- 1 tsp garlic granules (or 2 cloves garlic, minced)
- 100ml tomato ketchup
- 1.5 tbsp cider vinegar
- 25g light brown sugar
- 2 tsp tamari (gluten free soy sauce)
- 1.5 tbsp Henderson's relish/gluten free worcestershire sauce
- 100ml pineapple juice (orange juice also works nicely)
- 1 tsp cumin
- 2 tsp cajun spice (or cinnamon if you are making it for kids, or people who do not like spice)
- 2 tsp dried oregano
- Place the chicken into the slow cooker pot (if you have a simmer mode) or saucepan, along with a small slug of olive oil, and sear for 5 minutes until browned (either use simmer mode or transfer to your hob to cook).
- Add all other ingredients to the slow cooker pot with the chicken, then top up with 50ml water. Give everything a really good stir.
- Place the lid on your slow cooker and set to cook on low for 6-7 hours.
- Once cooked, scoop out the chicken onto a plate. Shred it with two forks and then return the meat to the slow cooker.
- Stir well and then set it to simmer (with the lid off) for about 15 minutes. Then it's ready to enjoy!
