I’m often asked for ideas for gluten free midweek meals, so I have written a little recipe round up. This is a collection of all my gluten free recipes that can be made in 15-30 minutes. From satisfying pasta dishes and peanut butter noodles to cheddar quesadillas and crispy chickpea bowls, there’s something for everyone.

Under each recipe heading you’ll find a little description of what the recipe features, as well as whether it is naturally dairy free/vegetarian/vegan or can be easily adapted. All meals listed are gluten free.

Gluten Free 15-Minute Meals

1. Peanut Butter Tahini Noodles (DF, VO, VGO)

Ever popular with you guys, I see these gluten free noodles being made time and time again and get such great feedback about this recipe. It’s one we love making at home too, in fact my husband is cooking up a prawn version for our dinner right now as I type this!

These peanut butter tahini noodles are super speedy to whip up. The recipe produces a gorgeous sesame peanut gluten free stir fry that can easily be made vegetarian or vegan by simply omitting the chicken. It still tastes just as good. From preparation, through cooking, to eating, this delight only takes 15 minutes to make and it is brimming with crunchy veggies and smothered in a tasty satay-style sauce. 

2. Speedy Paneer Stir Fry (V)

A 15 minute, delicious paneer stir fry with tomato, pepper and kale. Flavoured with gently, fragrant spices. Perfect with naan or bread for scooping.

3. Crispy Spiced Chickpea Bowl (DFO, V, VGO)

Golden crispy chickpeas mix with sesame-packed zatar spice and paprika, then are topped with sweet red sauteed red onion, a minted yoghurt drizzle and creamy side of avocado. Yums! If you are vegan or dairy free, switch the yoghurt out and try a tahini drizzle instead as that flavour combination would be equally delicious.

4. Pasta with Salmon, Asparagus, Mascarpone & Spring Onions

A tasty pasta dish using smoked salmon for speedy cooking. The result is one taaaaasty dinner!

5. Healthy Chicken Kebabs (DFO)

These yoghurt, herb and paprika marinated chicken kebabs are a healthy and tasty dinner idea. Serve them with pitta bread and salad, or maybe even my homemade Greek Salad.

6. Arepas (DF, V, VG)

This South American specialty is a bit like a savoury corn bread, shaped like a firm patty and slightly crispy on the outside. Arepas are a staple in Colombia, Venezuela and Bolivia, and are delicious split and stuffed with fillings.

7. Rose Harissa Chickpea & Halloumi Warm Salad Bowl (V)

A delicious warm salad bowl perfect for any time of the year, which only takes 10 minutes to make. Golden, rose harissa spiced chickpeas and halloumi on a fresh and fruity salad base. Filling, healthy and seriously tasty.

8. Chicken, Nectarine and Blackberry Salad

Oh these flavours totally hit the mark for me whenever I make this salad. It’s perfect for using up roast chicken leftovers. Try it with my homemade garlic bread (which is also very quick to make).

9. Buckwheat Galettes (DFO, V)

I love savoury pancakes! These buckwheat beauties are naturally gluten free, easy to make and are delightful topped with egg, ham, spinach, cheese or whatever you fancy.

10. Avocado Toast with Feta & Pomegranate (V)

Pimp your gluten free avotoast with this feta, pomegranate topping!

11. Spicy Peanut & Miso Noodles

For an easy, speedy and delicious dinner these spicy peanut and miso noodles are guaranteed to hit the spot. Plus this is a gluten free, dairy free and naturally vegan recipe so it’s one that can be enjoyed by your whole household.

Gluten Free 30-Minute Meals

Still speedy, here’s some yummy dinners you can make in a mere 30 minutes:

1. Creamy Tomato & Nduja Gluten Free Orzo with Chicken

For an utterly delicious dinner, made in under 30 minutes, this tomato and nduja gluten free orzo with chicken should be your new go to recipe. It’s creamy, tasty, satisfying and comforting, with gluten free orzo pasta cooked directly into the sauce making it mouthwateringly good.

2. Gluten Free Flatbread Pizza (DFO, V)

With only Greek yoghurt and gluten free self raising flour needed, and ready in under 30 minutes, this is a fab speedy alternative when you don’t have time to make a yeasted base.

3. BBQ Chicken Sliders (DFO)

These gluten free BBQ chicken sliders are a guaranteed hit with your family and friends. Loaded with BBQ chicken and mozzarella, then oven baked and slicked with garlic butter to finish, they taste amazing!

4. Chorizo, Ricotta & Sundried Tomato Pasta

A delicious pasta dinner in under twenty minutes, with simple ingredients and wonderful flavours, this dish will fast become one of your weekly go to meals. Ideal for those evenings when you want a yummy bowlful of food without having to slave away at the stove.

5. Teriyaki Salmon Sushi Bowl (DF)

Gloriously sticky teriyaki salmon, perched on a bowl of seasoned sushi rice with fresh edamame beans and creamy avocado. Think sushi, but without the hassle of having to make the rolls. This is the MOST POPULAR meal on my entire website!

6. Harissa Chicken & Caramelised Red Onion Pasta (DFO)

This is my favourite pasta dish, quick to make and utterly delicious. Proper comfort food, packed with flavour, a creamy harissa and tomato sauce melding through caramelised red onion and soft pieces of chicken.

7. Baked Prosciutto Salmon Parcels (DFO)

Wonderfully succulent salmon, quickly oven baked wrapped in a blanket of prosciutto with lemon, butter and chives mmm mmm! This prosciutto salmon is one tasty meal and only takes 20 minutes to make.

8. Baked Chicken Tenders (DF)

Crispy, golden and much healthier than the shop-bought varieties, these gluten free baked chicken tenders are a doddle to make. Plus they are bound to be a hit with the whole family.

9. Crispy Beef Taco Bake

Seasoned beef mince, peppers and onion in crisp taco shells, baked with cheese and jalapenos, then finished with guacamole – SO delicious!

10. Air Fryer Bhaji Burgers (DFO, V, VeO)

Epic bhaji burgers cooked in an airfryer (or oven), with mint raita and mango chutney. Gluten free and easily made vegan.

12. Honey Harissa Halloumi and Aubergine Burgers

These honey harissa halloumi and aubergine burgers are SO GOOD. You can make it all in a single pan, making this a perfect recipe for that summer burger treat without having to fire up the BBQ.

13. Speedy Mushroom Stroganoff (V)

This speedy mushroom stroganoff is such a quick and easy midweek meal. Yet it really packs a punch on the flavour front, with a gorgeous creamy paprika mustard sauce coating those mushrooms.

14. Celeriac Rosti with Pea Puree & Crispy Spring Onions (V)

Crispy, golden celeriac rostis nestled into pea puree and topped with seared spring onions, a little greek yoghurt and smoked paprika. All in all, utterly delicious and a great way to use celeriac rather than resorting to soup.

15. Sriracha Mac n Cheese

Comfort food with a spicy twist, this gluten free sriracha mac n cheese is a perfect pick-me-up on a cold day. Creamy, cheesy pasta with a hit of sriracha spice. Topped with crispy cheddar breadcrumbs and sliced spring onions – it’s such a great combination!

16. Feta, Courgette & Pesto Puff Pastry Tart (V)

This yummy feta, courgette and pesto puff pastry tart is a fab speedy meal option to try. It is packed with flavour and veggies. Crispy gluten free puff pastry, topped with courgette, pesto, feta and pine nuts before being finished with a handful of fresh salad leaves and fresh mint. 

17. Middle Eastern-inspired Buddha Bowls (V, DFO)

Spiced chickpeas, tahini pomegranate rice, avocado, olives, hummus and crunchy salad combine to make one seriously delicious bowlful.

18. Nasi Goreng (DF, V)

Nasi goreng is a popular Indonesian fried rice dish and is absolutely delicious, however it is very hard to find it gluten free due to the inclusion of kecap manis (a sweet, thick soy sauce). I’ve worked up a gluten free spicy vegetable fried rice dish in honour of nasi goreng, which is both gluten and dairy free too.

19. Red Thai Curry Noodles (DF, V)

These delicious red thai curry noodles are an absolute favourite meal of mine at the moment. Slightly soupy, packed with fabulous flavours and immensely satisfying. They are also quick to make, only taking 30 minutes, so make a lovely midweek meal.

20. Rainbow Rice Buddha Bowl (VO, DF, VeO)

This yummy gluten free buddha bowl is a brilliant healthy recipe to try for lunch or dinner. It features a bed of brown rice, topped with lovely crunchy veggies, soy sesame fried kale and avocado, all drizzled with a delicious maple lemon dressing. The finishing touch – your choice of protein, whether it be salmon, chicken, eggs or nuts.

21. Mac n Cheese with Hidden Veg (V)

A twist on my original gluten free mac and cheese recipe, this version is packed with sneaky veggies and is perfect for kids. If you want to make a lighter version, simply use semi-skimmed milk and half-fat creme fraiche, but otherwise I have included full fat varieties here to make the recipe extra kid friendly.

22. Courgette, Pea & Feta Fritters

Lovely and crisp at the edges, with a soft interior of courgette, pockets of feta and bursts of pea.

23. Garlic Mushroom Pasta (V)

This delicious gluten free garlic mushroom pasta is one of those simple meals that you need to have in your midweek repertoire. A few easy ingredients are transformed into a TASTY bowlful of gluten free pasta that also packs in a good portion of veggies.

24. Chicken Fajita Traybake (DFO)

This chicken fajita tray bake is a super speedy and easy dinner, with minimal preparation needed and only 20 minutes cooking time. Juicy, succulent pieces of chicken are baked with peppers, onions, tasty spice mix and salsa.

25. Creamy Tomato & Chicken Pasta (DFO)

This creamy tomato & chicken pasta is pure comfort food. What’s more, it’s quick and easy to make too! A rich tomato base combined with creamy mascarpone, plus chicken, spinach and cherry tomatoes for an Italian-inspired gluten free pasta dish.

26. Thai Spiced Pork Bowl (DF)

This Thai spiced pork rice bowl is gloriously flavoursome and is a great way to change up your usual lunch or dinner. Caramelised spicy minced pork, sweet pineapple, pickled cucumber and fresh chillis sit on a bed of rice and really make the most brilliant combo.

27. Tex Mex Beef Burgers (DFO)

Spice up your burger game with these awesome tex mex beef burgers, which are gluten free and packed with flavour! Perfect both for BBQ season and for chilled fakeaway dinners at home, the recipe is super adaptable so you can tweak the spice levels if you are cooking for the whole family.

28. Pan Fried Gluten Free Gnocchi with Pancetta, Leeks & Peas

This lovely pasta dish features pan-fried gnocchi with braised leeks, pancetta and peas in a light creamy sauce. It’s the perfect change from your classic pesto pasta or tomatoey pasta sauces and has been a big hit with my family.

29. Bream with Lemon Caper Butter Sauce (DFO)

Whenever we have this pan fried bream with lemon caper butter at home, I really feel like I am having a lovely restaurant meal. Yet it is so simple to make! Cooking fish can seem intimidating at first, but follow my easy recipe and you’ll be a confident fish cook in no time at all.

30. Pad Thai (DF)

Lots of the ingredients used in authentic pad thai need to be bought from specialist Asian food stores in the UK. I decided to try to recreate the flavours of pad thai using ingredients that are readily available in UK supermarkets and I am very happy with the result.

31. Honey Tumeric Baked Salmon (DFO)

Succulent honey tumeric baked salmon, which is topped with butter and lemon before being baked in a tin foil parcel to create the most amazing fish dish. A naturally gluten free meal, it’s quick and easy to make and the veggies cook in with the salmon for minimal effort.

32. Honey Soy Chicken (DF)

This gluten free honey soy chicken recipe means you can make takeout-quality dinner bowls at home. Succulent chicken breast cooked in a honey, tamari (gluten free soy sauce) and garlic glaze.
