I often make these gluten free rice crispy treats for school bake sales, as they are quick and easy to make, ever popular with the kids and subtly gluten free. Topped with colourful sprinkles and a spritz of edible glitter, they look really fun and vibrant.

They have a cripsy-chewy texture thanks to the combination of gluten free crispies and marshmallows, making them extremely moreish.

Make a batch to enjoy throughout the week (they keep well stored in the fridge or at room temp in an air tight container) and whip them up to enjoy with friends and family.

This is a no bake recipe and so simple that even kids can get involved with making them. Even those of you who are self declared “non bakers” will be able to create a beautiful trayful of these rice cripy treats. So go on, give it a go!

Do I Need Many Ingredients?

You don’t need many ingredients at all to make these rice crispy treats, only gluten free rice crispies, marshmallows, butter and sprinkles (make sure these are gluten free – some varieties contain wheat).

Which Rice Crispies Did You Use?

Any gluten free ones should work nicely – rice crispies, rice pops, rice snaps. I used some supermarket own brand ones (Tesco free from), but a different variety will be just as good, as long as it’s a specifically gluten free one. Note Kelloggs Rice Krispies (and other main stream varieties) are not gluten free.

If you aren’t gluten free and have found yourself craving these, standard rice crispies will work perfectly too.

Can I Make These Rice Crispy Treats Dairy Free or Lactose Free?

Yes! Simply use a dairy free baking spread/lactose free butter/plant based butter, depending on your dietary requirements, instead of dairy butter.

This easy recipe will make 20 rice crispy treats. The recipe can be halved/doubled easily, if you need to make more or fewer than this.

Gluten Free Rice Crispy Treats

Gluten Free Rice Crispy Treats

An easy no bake gluten free treat, these marshmallowy rice crispy squares are brilliant for bake sales, lunchboxes and weekend snacks.

Ingredients

  • 140g unsalted butter
  • 400g mini marshmallows (ideally white, but white and pink are fine for a slightly different hue)
  • 400g gluten free rice crispies
  • To decorate: gluten free sprinkles and edible glitter

Instructions

  1. Line a rectangular baking pan (mine is 25cm x 35cm) with non stick baking paper.
  2. Melt the unsalted butter in a medium-large, non-stick saucepan over a low heat.
  3. Add the marshmallows to the butter and stir over a low heat until they have melted completely. This takes about 5 minutes.
  4. Tip the gluten free rice crispies into the pan with the molten marshmallow and butter mixture - stir through. Work quite swiftly, as the marshmallow will begin cooling and will get stickier the long you take!
  5. Tip the rice crispie mixture into the prepared tin and press in down to form an even, fairly compact layer.
  6. Decorate with your choice of sprinkles and edible glitter, or you can simply leave them plain.
  7. Leave the mixture to firm up (this doesn't take long, I often pop them in the fridge if I need them pronto, for roughly 15 minutes - or you can leave them in there, covered with cling film, for as long as needed), then lift out of the tin and remove the baking paper. Cut into 20-24 squares (depending how big you want them to be).
  8. You can serve these as they are or you can pop them into colourful muffin cases, I find the latter handy for bake sales, to ensure they get stuck together on a warm day. Enjoy straight away or store in an airtight container for a few days. I like to keep mine in the fridge, for extra chewy crispie treats, but storing at room temperature is also fine.

Notes

You can also use large marshmallows for this recipe, if you can't find mini ones, simply chop them into smaller pieces before adding to the saucepan.
