Many of our neighbours are generously sharing excess apples from their trees at the moment (it’s been a bumper apple season here in the UK, after a glorious long summer), so I have been making a lot of crumble. As ever, I’ve been tweaking and playing around with the topping recipe and today I’m sharing my absolute favourite one with you.

My 7 year old declared this the “BEST APPLE CRUMBLE EVERRRRR” and she is quite the crumble aficionado. It’s long been her favourite dessert, so to have her sign off means I’ve well and truly nailed it.

A golden layer of crumble atop a bed of tangy baked apple, serve with lashings of custard for the ultimate cosy autumn/winter dessert.

What Type of Apples Should I Use?

Use any! Cooking apples are the traditional type to use for crumble, but while testing my gluten free apple crumble I used all sorts of different varieties and sizes. They were all lovely.

Give the stewed apple a little taste after cooking down in the pan, then add a little sugar if you prefer a sweeter base. However, remember that the crumble topping is sweet, so you really want a nice bit of appley sharpness to keep the balance.

Why Do You Use Dark Brown Sugar

To be honest, I ran out of light brown one day so gave dark brown a whirl and WOW! It gives a light treacly note to the crumble topping, which I loved alongside the apple.

Time for the recipe, which you’ll find below. This crumble serves 4 people generously or 6 for a standard sized portion, best with lashings of custard. You can make ahead if needed and store in the fridge until ready to cook, simply add 10 minutes onto cooking time to account for the chill.

Gluten Free Apple Crumble
Yield: Serves 4-6

Gluten Free Apple Crumble

A glorious gluten free apple crumble, a British classic dessert. Serve with lashings of custard for a hug in pudding form!

Ingredients

  • 1kg apples
  • 1 tbsp caster sugar + 90g caster sugar
  • 250g gluten free plain flour (I used FREEE by Doves Farm)
  • 1 tsp baking powder
  • 80g cold unsalted butter
  • 60g dark brown sugar

Instructions

  • Peel, core and chop the apples into small chunks. Add to a non stick saucepan with 1 tbsp caster sugar and 2 tbsp water.
  • Cook over a medium heat, stirring regularly, for a few minutes until the apples have cooked down. You want there to still be a few chunks, but for everything to be quite soft.
  • Meanwhile, add the 250g flour and 1 tsp baking powder to a large mixing bowl. Stir to combine.
  • Grate the 80g chilled butter into the flour and use your fingers to rub the butter into the flour until you have a breadcrumb-like consistency.
  • Now mix the 90g caster sugar and 60g dark brown sugar through the flour and butter mixture and that's your crumble topping done.
  • Preheat your oven to 180C (fan). Add your apple mixture to a medium-sized baking dish (mine is 27cm x 18cm, but any shape or size is fine, just aim for a similar volume) and spread to an even layer.
  • Tip the crumble mixture on top of the apple and spread into an even layer. Then bake in the oven on the middle shelf for 30 minutes. Serve hot with lots of custard!
